Where do we get our Turkeys? From the HoKa (Howard Kauffman) Turkey Family Farm in DeKalb County in Waterman, IL
Fresh or Frozen? Turkeys always come to us fresh from the farm. Never Frozen. Keep in mind, the farm does freeze the turkey breasts. Those are frozen once they come to us but we start thawing them out when they get to us.
Are they Open Range Turkeys? They are brooded in a temperature controlled starting shed. Soon, they are changed to open, airy shed to prepare the birds for their move to open ranges when they are 5 weeks old.
How are the Turkeys Fed? They are grown on low energy feed which causes them to take a bit longer to mature but gives more flavorful meat. Their major feed ingredient is corn that is grown on the farm.
Are the Turkeys Fed Antibiotics or Hormones for Growth? No. The birds are never fed hormones or antibiotics for growth promotion.
How do we know it is a High Quality Turkey? One of the most important factors is the tender loving care the birds get during the time they are on the farm. The same people handle these birds from day one, through all of the process to delivering the dressed product. Ho-Ka is inspired to do the very best, every day to produce a bird that they can sell with pride. Also, when slaughter time comes, they are herded to the plant on foot. This eliminates the stress on the birds created when hauled for hours on a large truck. The result is better quality meat.
