WHEN DO WE NEED YOUR ORDER?

To be guaranteed a turkey, we need your order by Friday, November 15th. After that, it is typically whatever we have left in stock.

ABOUT OUR FRESH TURKEYS

Our HOKA FRESH turkeys are grown on the Howard Kauffman family farm in DeKalb County in Waterman, IL where the one day old poults are brooded in one of the temperature controlled starting sheds. They are soon changed to open, airy sheds to prepare the birds for their move to open ranges when they are five weeks old. When slaughter time comes, they are herded to the plant on foot. This eliminates the stress on the birds created when hauled for hours on a large truck. The result is better quality meat.

The birds are grown on a low energy feed which causes them to take a bit longer to mature but gives more flavorful meat. The major feed ingredient is corn, which is gown on the HoKa farm. The birds are never fed hormones or antibiotics for growth promotion.

Probably the most important factor that insures high quality is the tender loving care these birds get during the time they are on the farm. The same people handle these birds from day one, through all of the process to delivering of the dressed product. This fact encourages HoKa to do the very best, every day to produce a bird that they can sell with pride.

SIZES OF OUR FRESH TURKEYS

Disclaimer: We strive to accommodate all turkey size requests. If the farm is out of a size, they will substitute to their nearest available weight, as we will also. We apologize for any inconvenience if this occurs.

Turkey sizes go in 2 lb. increments ranging from 10 lbs. all the way up to 30+ lbs. Please note that the 10-11 lb birds are difficult to come by and are often bumped to 12-13 lbs.

HOW MUCH TURKEY SHOULD I GET?

We recommend 1-1/2 lbs. per person because people tend to eat a little more on Thanksgiving. This typically will give you leftovers as well.

7 people or less……….. 10-11 lbs.
8-9 people………………. 12-13 lbs
10 people……………….. 14-15 lbs.
11 people……………….. 16-17 lbs.
12-13 people…………… 18-19 lbs.
14 people……………….. 20-21 lbs.
15 people……………….. 22-23 lbs.

TURKEY BREASTS – Sizes & Recommendations

Our turkey breasts always come in frozen. The turkey farm freezes their turkey breasts and then ship them to us. We begin to slack them out upon receiving the delivery. We recommend 1-1/2 lbs. per person for those bigger eaters and/or for some leftovers.

FULLY COOKED THANKSGIVING DINNERS

We are offering a fully cooked dinner option that is done by a local restaurant. You will receive a 12-14 lb. smoked turkey (not a Ho-Ka turkey). It comes with 3.5 lbs. of stuffing, 4 lbs. of mashed potatoes, 3.5 lbs. of Green Beans, 1 quart of gravy, an 8 oz. bowl of cranberries and 12 brown & serve dinner rolls. The latest date to order is Friday 11/22/18 and you must pick it up on Wednesday 11/27 before 4:00. If you don’t want the turkey and want a ham instead, you can get a 6-8 lb. smoked spiral bone-in ham in replacement of the turkey.
